What characterizes the experimental cuisine of Nicola Micheletti, chef and owner of the restaurant, is the study of the entire production chain and the immense culinary tradition of Made in Italy. In our dishes, we highlight the flavours of the best local and national ingredients, guaranteeing taste, quality, and innovation all at once. The ability to always pay attention to the balance of flavours demonstrates that gourmet cuisine should not only use cutting-edge techniques and elegant plating but can and should also rediscover the simplicity of flavours to become truly unique and unforgettable. We like to call it “cuisine of memory and emotions.” The menu served at the table features gourmet dishes created with the best seasonal ingredients. From the Tyrrhenian Sea to the Pisani Mountains, from the Tuscan countryside to the San Rossore Park area, Chef Nicola Micheletti focuses on the excellence of the local territory for his km0 recipes, blending tradition and modernity perfectly.

The Restaurant is open to both boutique hotel guests and external guests for brunch, lunches, aperitifs, dinners, and private events. During winter, the restaurant is divided between an indoor room and a spacious tent structure; in summer, the outdoor spaces and fresh air of the Tuscan countryside take centre stage.
